Here is a delicious and simple gluten-free and vegan pancake recipe that is nutrient-rich and great for health and weight loss! This recipe features oats rich in fiber, biotin, phosphorus, manganese, chromium, and molybdenum!

Yields 5-6 medium sized pancakes!

INGREDIENTS
1 1/2 cups rolled oats (this is my favorite gluten-free brand)
1 cup almond milk, water, or another non-dairy milk
1 banana
Oil to coat pan or a non-stick pan
INSTRUCTIONS
1. Heat a pan on medium heat. Add a small amount of coconut oil or other vegetable cooking oil to the pan.
2. Add ingredients to a blender or food processor and blend until a smooth batter forms
3. Using 1/4 cup measuring cup add pancake batter to your pan and cook 2-3 minutes before flipping. Cook additional 2 minutes on other side.
4. Serve with fresh fruit or other toppings such as coconut, cinnamon, dried fruit, nuts, nut butter etc.
